Cucumber Raita


600ml (2.5 cups) yogurt
1/2 cucumber
4 spring onions
Salt and pepper
1 green chilli
1/4 tsp paprika

Serves: 4-6
Preparation time: 1 hour 10 mins

Beat the yogurt until it is smooth, then beat in the diced cucumber, finely chopped spring onions and seasoning. Spoon into a serving bowl, cover and chill in the refrigerator for 1 hour.

Sprinkle over finely chopped green chilli and paprika before serving.

Hint:

Add finely chopped mint for a little extra zing.
