Boozy Sauce for Christmas Pudding

125g unsalted butter
225g dark brown sugar
1 egg
65ml port
65ml medium-sweet sherry
600ml thickened cream

Melt butter in a saucepan over medium heat. Add sugar, stirring to combine well, then add egg, port and sherry, whisking for 2 minutes over heat to dissolve sugar. Seal in a jar, allow to cool, then refrigerate until ready to serve. To serve, whip cream until soft peaks form, then fold into sauce.

Serves 8.
