Chocolate Cookie Crumb Pie Crust Recipe
100g butter, soft
3/4 cup castor sugar
1 cup plain flour
1/2 cup sifted Dutch cocoa powder
1/2 tsp salt
45g butter, melted and cooled
Biscuit crumbs
Cream butter and sugar. Be sure to scrape down the sides of the bowl as needed and ensure sugar crystals are combined into the butter. Sift in flour and cocoa powder and add salt. Mix until fully combined, also scraping down the sides of the bowl. The mixture should be dry and crumbly.
Line a baking tray with parchment paper. Pour the mixture into the tray and spread it out evenly to approx. 1 cm thickness. Bake for 10 mins. Remove from oven and allow to cool completely.
Pie crust
Crush the cookie chunks until they turn into crumbs. I like to use a food processor, but you can also use a ziplock back and a rolling pin if you don't have one.
Put the crumbs in a bowl and stir in the melted butter until the crumbs are wet. Using your fingers, press the crumbs into the side and bottom of the pie plate to form a crust of consistent thickness to your liking.
Blind bake for 3-4 mins and allow to cool completely before filling with your choice of pie filling.
